Make-It-Your-Own Soup Bar

Fall is the perfect season for soups, and we're excited to show you that making soup at home doesn’t always require long hours of simmering! Here’s how to craft a delicious bowl of soup personally tailored to the tastes of each person in your family. Just start with a broth and go from there!


SHOPPING LIST

Base:

Broth


Grains (pre-cooked):

Short pastas

Egg noodles

Rice noodles

Soba or Udon noodles

Tortellini 

Rice or wild rice


Proteins:

Shredded rotisserie chicken

Meatballs (frozen and heated)

Beans (canned)

Lentils (precooked)

Tofu



Vegetables:

Shredded cabbage

Shredded carrot

Roasted or blanched potatoes, carrots, or parsnips

Swiss chard 

Spinach 

Diced tomatoes (fresh or canned) 

Broccoli florets (frozen and defrosted)

Peas (frozen and defrosted)

Corn (frozen and defrosted)



Condiments & Mix-Ins:

Cream/coconut milk

Grated ginger

Lime/lemon juice

Chili paste

Miso paste


Garnish:

Fresh herbs

Avocado

Shredded cheese

Croutons

Green onions, chopped


On the side:

Sliced apples

Cheese wedges

Parsnips

How-To:

 

(This version includes shredded rotisserie chicken, wild rice, avocado, cilantro, coconut milk, lime, and sriracha for older tastebuds)

 

It’s simple! 

Get a pot of water boiling and quickly parboil any of your veggies and pastas/noodles (this doesn't take as long as you may think!)  Simultaneously simmer a pot of broth.Then use your Rover Tray  to lay out all the options for your family. 

Ladle your broth into individual bowls and let everyone choose their own mix-ins. Garnish with any of your favorite toppings. 


LUNCH WITH LEFTOVERS

 

Savory Oatmeal

There's no real recipe to stick to! To make your oatmeal savory, use broth instead of water when cooking. Then mix in any of your favorite veggies and herbs- the possibilities are endless! We especially like mixing in cheese and serving it with a soft boiled egg to make it extra savory. Here's how we make ours:

1. Boil 1 cup stock.

2. Stir in 1/2 cup oats & salt to taste.

3. Lower heat and simmer for 8-10 minutes, stirring occasionally.

4. Mix in 1/4 cup cheese and 1/4 cup defrosted frozen spinach.

5. Pack in Insulated Container and serve with soft or hard boiled egg. 

 

MORE LUNCHBOX LEFTOVER IDEAS:

  • Have soup the next day! It'll stay warm in the Insulated Container
  • Use the broth to cook grains for a hefty grain salad
  • Use broth to make a risotto and mix in any extras
  • Cook down leftover broth with diced tomatoes and fresh herbs to make a quick tomato sauce
